IRISH SODA BREAD

3 ¼ cups flour
1 tsp baking powder
½ tsp salt
1 1/3 cups buttermilk
1/3 cup and 1 Tbsp. Sugar
1 tsp baking soda
1 stick butter
½ cup raisins or currants

Note: I like to cover raisins with water for 15 minutes to soften.

Mix all dry ingredients (except extra Tsp of sugar) together in a large Bowl. Cut in butter with 2 knives. Drain and stir in raisins. Add milk. Turn out on board and knead 5 or 6 times, adding extra flour if sticky. Form into a round loaf approx 6’’ and 3’ tall and place in a greased and floured round cake pan. Cut large X in top of loaf ½ inch deep. Sprinkle top of loaf with 1 Tbsp of sugar. Bake at 350 for 50 - 55 mins.
