LEMON PECAN BREAD
1 cup sugar
4 eggs
1/8 tsp. salt
3 to 4 Tbs. freshly grated lemon peel
1 2/3 cups flour
1/2 tsp. baking powder
1/2 cup half & half
1/3 cup butter, melted, cooled
3/4 cup finely chopped pecans
Beat sugar, eggs, salt and lemon peel with a whisk until well mixed. Stir in flour and baking powder. Stir in half &half and melted butter. Stir in pecans.
Pour into greased & floured 9x5 inch loaf pan.
Bake at 350 degrees, 50-55 minutes.
Glaze (Optional):
Add 3-4 Tbs. lemon juice to 1/3 cup confectioner’s sugar and spread on while hot.
